Hey guys!!! It is summer!! That means the days are longer and full of sun, fun, swimming and of course all the cookouts your grill can handle.

We get together all the time in the summer around my grandparent’s pool. Between Memorial Day and Labor Day and the million summer birthdays, there is always something to celebrate and the grill is always going.

My grandparents always provide the hamburgers and ribs and everyone else is in charge of bringing sides. Now here in Virginia it gets hot and the last thing I want to do is spend all day in the kitchen making sides all summer.

Whether we are enjoying a quiet evening grilling at home or a celebration at my grandparent’s pool, STOUFFER’S Macaroni and Cheese is always there. This is the perfect side for anything from hot dogs to BBQ ribs but I have seen people top their burgers with it and my grandma likes putting pulled pork on top of hers.

That got me thinking about how when we were younger my brother and I use to live off macaroni and cheese with BBQ sauce mixed in during summer break, so I figured why not make that into a meal?

Pulled BBQ Chicken that you can make right in your slow cooker or the stovetop gets piled on top of that luscious macaroni and cheese and then sprinkled with some crispy fried onions. Yum!

This makes a perfect summer side dish or meal with a side salad. It is a great way to use up leftover grilled BBQ chicken or you can whip some up in the slow cooker and not worry about heating up the kitchen.

I just add chicken and our favorite BBQ sauce to the slow cooker and let is go for about 4 hours until cooked through. Then a quick shred and it is ready to top the Macaroni and Cheese. You can also cook the chicken on the stove by adding the chicken, sauce and a splash of water to a skillet and covering till cooked through.

It is a winner with my kids, they love it!

BBQ Chicken Macaroni and Cheese

BBQ Chicken Macaroni and Cheese

Creamy Macaroni and Cheese topped with BBQ chicken and crispy fried onions.  This makes the perfect summer main dish or the perfect side dish for a cookout.  

Ingredients

  • 1 Family Size Stouffers Macaroni and Cheese
  • 1 pounds boneless skinless chicken breast or tenders or thighs
  • 1 cup BBQ Sauce
  • 1/4 cup crispy french fried onion

Instructions

  1. In your slow cooker add the chicken and bbq sauce and cook on low for 4 hours.  You can also cook the chicken on the stove by adding the chicken and bbq sauce and a splash of water a skillet, bringing to a boil and reducing to low and covering for about 20 minutes or until chicken is cooked through.
  2. Shred chicken.
  3. Meanwhile cook the macaroni and cheese according to box directions.
  4. Add the shredded chicken on top of the macaroni and cheese and sprinkle with crispy fried onions.
