Mall Bourbon Chicken
I love the bourbon chicken from the mall, the asian not made with any actual bourbon kind. Surprisingly there are not a ton of recipes out there for it, but I did manage to come across a few. While this doesn’t taste exactly like the kind from the mall, it still makes a super tasty dinner that everyone loves. Give it a try and Im sure it will make several appearance on your dinner plate.
Ingredients:
2lb boneless skinless chicken breasts
peanut or canola oil (for frying)
cornstarch (for dusting, optional)
Sauce-
1 garlic clove (minced)
¼ teaspoon ginger
¾ teaspoon crushed red pepper flakes, cayenne or sriracha
¼ cup apple juice
2/3 cup light brown sugar
2 tablespoon ketchup
1 tablespoon cider vinegar
½ cup water
1/3 cup soy sauce
Cut chicken breasts into bit sized pieces, and if you choose lightly dust with cornstarch. Heat oil in your wok or pan and fry chicken bits in batches until lightly browned. Drain on paper towels and set aside.
In a bowl combine all sauce ingredients. Pour into pan and bring to a boil. Add chicken bits back to the pan, reduce the heat and simmer till thick and glazy (is that a word?) and serve over rice.
