Bacon Wrapped Shrimp & Pineapple Skewers

Hey guys! Today I am going to talk to you a little bit about everybody’s favorite thing, bacon!! We all love bacon right? Some people might even think all bacon is created equally, wrong! Some people might also think bacon is just for breakfast, double wrong!!
I am going to tell you about how awesome Wright® Brand Bacon is and how amazing bacon for dinner is lol!
I bought some Wright® Brand Bacon the other day at Walmart and wow what a difference it is than the regular bacon I have been making. Wright® Brand Bacon is thick and meaty and the flavor is just astounding, you can tell as soon as you open it that this is much more than your regular bacon. This bacon is hearty and flavorful and doesn’t shrink up to tiny little crunchy bacon bits like other brands. The best part? It was such a value at Walmart! Now I can have high quality bacon anytime I want (which is often lol)
Now I know bacon is usually paired up with eggs and pancakes, but sometimes bacon likes to shake it up and hang out with things like shrimp and burgers, yum!
Today I am going to share with you an awesome recipe for Bacon Wrapped Shrimp & Pineapple Skewers! They are drizzled in a sweet pineapple soy glaze and are perfect for summer with that pineapple touch. They can be broiled or you can pop these babies on the grill, either way they are delicious!
You can serve them to your friends as an appetizer or throw a couple over a bed of rice and dinner is done!
I just start by cooking up a few pieces of Wright® Brand Bacon in my oven (the only way I cook bacon now!) I want to cook it through but not crisp it up, so you want to make sure you pull it out while it is still flexible.
Then I let that cool while I skewer pineapple chunks and medium shrimp onto skewers, you can use any shrimp here, precooked, raw, either one, if it is raw just make sure you cook it until it’s pink.
I wrap about a third of a piece of bacon around each shrimp and secure with a toothpick.
Then I mix a little pineapple juice (just use the juice from your canned pineapple chunks), brown sugar and soy.
I drizzle the sauce over the skewers and pop them under the broiler, keeping an eye on them, for just a few minutes.
Then that is all, they are ready to be served!
These are the perfect appetizer or dinner or even lunch for these warm summer days and they are really a great way to showcase that delicious bacon, yum!
Bacon Wrapped Shrimp & Pineapple Skewers
Ingredients
- 16 shrimp
- 16 pineapple chunks
- 8 slices of Wright® Brand Bacon
- 2 tablespoons pineapple juice
- 1 tablespoon soy
- 1 tablespoon brown sugar
Instructions
- Cook the bacon until cooked through and flexible, not crispy! Do not over cook!
- Thread the shrimp and pineapple on skewers.
- Wrap each shrimp in 1/3- 1/2 slice of bacon and secure with toothpick.
- Place on foil lined baking sheet and broil for 2-3 minutes.
- Serve!

Wright bacon is the BEST! But for me, it has to be Applewood Smoked.
Love this recipe by the way. I make it on individual skewers, but this looks easier.
