Buckeyes (chocolate covered peanut butter balls)
These are amazing, they are so versatile and can be changed to fit anyone’s taste. You can just roll them in confectioners sugar, coconut, pecans, hazelnuts but I chose chocolate. I used plain chocolate almond bark, its sets up faster for me but you can also use white chocolate almond bark. These candies take no time to make and would make a great gift for anyone too. I stumbled across the recipe looking for cupcakes and this recipe was rolled into balls and put in the middle of my chocolate cupcakes to make chocolate peanut butter cupcakes for Deans birthday. I think everyone will love these, I mean who doesn’t like peanut butter and chocolate?
- 2 cup confectioners’ sugar
- 1/2 cup creamy peanut butter
- 8 tbsp. unsalted butter, at room temperature
- 1 tsp. vanilla extract
- Chocolate (almond bark/candy coating)
Mix the peanut butter and butter until combined, then stir in the sugar and add in the vanilla. Stir till mixed well.
Roll into small balls and refrigerate an hour or longer.
Melt chocolate and dip balls in. Place on wax or parchement paper.
Let set up and eat!
