Hey guys!! Are you going crazy yet stuck at home? I don’t mind it too much but I am getting a little tired of all the cooking, and I love cooking, but this is a lot. These kids want breakfast, snack, second breakfast, snack, lunch, snack, dinner, snack, supper, it’s endless lol.
We all have been spending more time in the kitchen these past few weeks, months, I don’t even know how long it has been anymore lol, and while I enjoy making my 27th loaf of banana bread this mama needs a night off every now and then.
I do not leave the house often and when I do it is to suit up in my gloves and mask and grab a few necessities and this last time when I was at Walmart scoping out the toilet paper section I noticed their hot deli was open and the aroma of fried chicken and the allure of not cooking dinner drew me in.
With the 4th of July coming up I knew I wanted to a good old platter of fried chicken and chicken tenders to serve. Fried chicken is the quintessential summer time food around here, so it is perfect for the 4th!
I have found during this time that doing anything just a little special, just a tad bit out of the ordinary can make these long days fun for my boys. So I decided to have a everything on a tray picnic style which is perfect for taking outside to watch the fireworks. I picked up chicken tenders and some crunchy fried chicken and arranged it all on a big board, charcuterie style so we could all make our plates under the glow of the fireworks.
The chicken tenders were huge and crunchy with all white meat inside, they of course were my boy’s favorites.
The fried chicken was juicy perfection with that perfect crispy skin, moist meat and perfectly seasoned. There is nothing more American than fresh, crispy, fried chicken and apple pie, both perfect for your 4th of July celebration!
I also picked up some mac and cheese from the hot deli which was creamy and made with five cheeses!
And there is nothing more comforting than potatoes right, which I why I got two different kinds lol. First of all the potato wedges are amazing! Fluffy, crispy and flavorful, sadly there were no leftovers of these because we could not stop eating them!
The mashed potatoes and gravy were fabulous, super creamy, made with real potatoes, milk and butter, simple and delicious and topped with that rich brown gravy they were heavenly!
To make this 4th of July even more fun I decided to put some potato wedges and chicken strips in popcorn containers for the boys. They got to snack out of their containers while watching the fireworks and they loved it! They thought it was so great and what a fun way to celebrate!
To decorate for the 4th of the July I get out some red, white and blue and always make a nice festive cake or cupcakes. These red, white and blue cake is perfect for the 4th!!
I found these cute red, white and blue straws for our drinks, how cute are they!
I just cannot get over how yummy the food was, what a great price it all was and how much time it saved me. I had time to get together a fabulous 4th of July with my kids without spending a minute in the kitchen. They loved every bite and fun summer memories were made.
