Hey guys!!  It is just me or does your fall seem super busy!?  I just cannot keep up!! Back to school this year has thrown me for a loop.  Between trying to get homework done, sign papers, do my own work, unload the dishwasher, change the baby, get my husband up for work (he works the night shift) I barely have enough time to get dinner on the table before it’s bath time, time to pack lunches and get everyone in bed.

So many nights I am just tempted to phone it in literally and call for take out, but I love cooking!  Even when I am busy, busy, busy I still want to get in the kitchen and make a home cooked meal for my family.  I need that time, even if just for 20 minutes I need to be in the kitchen where I can decompress and make some food.

That means I am always on the lookout for easy meals, but not just any easy meals, easy meals that will appease a picky 1 year old and even pickier 8 year old.

Also it seems that once the weather starts to get a little chill in the air I crave comfort food, my grandma’s chicken pot pie being at the top of my favorite comfort food list.

While shopping at Walmart I headed over to the soup section where I always stock up on delicious Progresso Soups.  These are a staple in my kitchen, everyone loves soup and they make a perfect quick but comforting lunch for me on my super busy days.

Progresso Chicken and Wild Rice (1 of 1)

I love Progresso Soups because not only are they delicious but there are so many varieties and flavors!! They have classic flavors, newer flavors, gluten free, light soups, vegetarian soups, low sodium ones and even organic soups.  All their chicken is raised with no antibiotics or hormones, their soups contain no added MSG and no artificial colors or flavorings.  I mean they have everything you could ever want!

I figured if Progresso can make my lunch’s fabulous and quick maybe they could help me with dinner too…

So I put two and two together and came up with this Quick Chicken and Wild Rice Pot Pie.

This comes together in minutes and goes from my stove to my oven in no time!

I just whip up a simple homemade cream of chicken base, add in some frozen vegetables and Progresso Chicken and Wild Rice soup, add in an incredible topping of baking mix and milk, and 25 minutes later I have a delicious meal ready to go!

Chicken & Wild Rice Pot Pie

Ingredients

  • 1 can Progresso Chicken & Wild Rice Soup
  • 3 tablespoons butter
  • 3 tablespoons flour
  • ½ cup milk
  • ½ cup Progresso Chicken Broth
  • 2 cups frozen mixed vegetables
  • 4 cups baking mix
  • 4 cups milk

Instructions

  1. In a large oven proof skillet, combine butter and flour.
  2. Whisk in milk and Progresso chicken broth. Mix thoroughly until thick
  3. Add in frozen vegetables and 1 can of Progresso Chicken & Wild Rice soup. Stir well.
  4. In a bowl, mix the baking mix and milk
  5. Pour the baking mix batter over the top of the veggies, base and Progresso soup
  6. Bake at 400 for 25-30 minutes or until top is golden brown.
  7. Serve!

 Dinner that takes just minutes!! I love it.

It is so comforting, so warm, so easy and so quick!  The best part is my family loves it!!

I love how easy Progresso Soup makes this recipe.  In just a few minutes I can have this in the oven baking and filling my house with a mouthwatering warmth, and I always have all the ingredients on hand!

So as the air starts getting chilly and you start craving those comforting meals just make sure you head to Walmart and stock up on Progresso Soups.  Not only are they delicious as a soup but they make incredible recipes too!
