Watermelon Smoothie 1

Hi everyone! It’s Moira from Hearth and Homefront. Like many people, we ended up

with a huge amount of watermelon last week for the 4th

ran out of bowls to put it in! I decided to blend up all the leftover watermelon so that

we could start adding it to drinks, and freeze some for the kids to enjoy late in the

afternoon when the temperatures hit scorching.

We mixed it with ginger ale and sparkling water, as well as creating an adults only

version by mixing it into a gin and tonic. The next day we had enough to make

smoothies! (Told you it was an obscene amount of watermelon!)

This is my favorite of the smoothies. I blended cucumber, watermelon and some

greek yogurt together and that’s all! Easy, right? I love the fresh flavor of the

watermelon and cucumber, and the tartness of the yogurt balances the sweetness of

the watermelon perfectly. If you want to get really fancy, toss in a few mint leaves!

Watermelon Cucumber Smoothie

Ingredients

  • Serves 1
  • 1 cup blended watermelon
  • 1 cup plain greek yogurt
  • 1 ⁄2 a cucumber, sliced

Instructions

  1. Pop it all in a blender or food processer and blend until combined! Easily doubles or
  2. triples, and would be fabulous frozen too!

  1. This looks so yummy and simple. What kind of blender did you use? I’m wondering because it looks like you left the peel on the cucumber.
    It reminds me of the cucumber melon lotion that was oh so popular when I was in middle school.
