Chicken Caesar Salad Subs

Everybody loves chicken Caesar salad right?  Its on every menu in every restaurant and its just a staple for many people.  I wanted to change it around a little bit.  I figured I would make it into a sub, everything tastes better on bread right?  It would at least make salad easier to eat for my brother who loves chicken caesar salad and loves to play xbox while eating and trying to eat a salad while shooting bad guys just doesn’t work, thus this sub was born.

So the very basics of a caesar salad are romaine, parmesan, caesar dressing and croutons.  I butter the inside of the sub rolls and sprinkle them with garlic salt or garlic powder and a little parm and pop them under the broiler till they are golden and crunch and voila your sub roll is now your “crouton” portion of the salad.  Then you just pile in your lettuce, chicken and dressing and whatever else you like on your salad and dinner is done.  This has been extremely popular with my family and I have had a few requests for the recipe before so now I’m sharing with you guys and I hope you enjoy it!!  Did I mention this dinner also takes no time to prepare, always a good thing in my book! :)

Chicken Caesar Salad Sub (serves 4-6)

4 Boneless Skinless Chicken Breasts
Italian Seasoning
Garlic Salt
Pepper
4-6 Sub Buns
Softened butter
Parmesan Cheese
Romaine Lettuce
Caesar Dressing

Place the chicken on a baking sheet and sprinkle with Italian seasoning, pepper and garlic salt.  Pop into 425 oven till cooked through. 

Spread the inside of your sub rolls with softened butter, sprinkle with a little garlic salt (or powder) and sprinkle some parm in there too.  Place the rolls under your broiler and watch them like a hawk till they are golden brown on the inside. 

Spread a little ceaser dressing on the inside of the subs and lay in a few leaves of the romaine.  Arrange the chicken ontop of the lettuce.

Sprinkle the whole sub with more parm and an extra drizzle of dressing if you like. 

Serve to your family and enjoy this pretty easy and tasty dinner.
