Cheesy Jalapeno Chicken and Rice Casserole

It is getting chilly out and I always turn to warm comforting foods!  But just because I want a comforting meal doesn’t mean I want to spend all day in the kitchen.  This dish is creamy, hearty and has a little kick to it and always hits the spot and the bonus is it is so easy to make thanks to Success® Jasmine Rice.

I love keeping Success® Rice on hand for those busy nights when I could use a little help in the kitchen.  With such great varieties like white, brown, Jasmine and Basmati rice you can have a flavorful rice dinner in no time any night of the week.

You can add a new twist to any of your favorite dishes by switching out your regular rice to one of the flavorful quick cooking Success® Rices.

What makes Success® Rice such a quick hit with my family?  Besides it’s great taste Success® Rice is no mess, no measure, boil in bag rice that is ready in just 10 minutes!!!  I love it!!  It is such a time saver in the kitchen.

Success® has the only boil in bag Jasmine rice.  It is so buttery, a little nutty and the perfect compliment to any dish!

Now back to this cheesy yumminess.

This dish is one my family loves. My whole family extended and all have been making this dish since we discovered it years and years ago and it still makes a monthly appearance at all my family’s dinner tables.  The best part is you can make this in the crockpot, you can make it ahead and freeze it, you can make it earlier in the week and warm it up later, it is easy going like that.

The other great thing about this dish is, you can leave out the chicken and have a great cheesy side dish for tacos or grilled chicken.  If you are not keen on spicy food you can swap the pepperjack cheese out for cheddar easy peasy.

Next time you need a warm filling  and quick meal to fight these cold winter evenings or a new side dish to spice up the table this is the recipe for you!

Stopping in from Recipe Sharing Monday. This looks like perfect fall comfort food. I only the temps would cooperate (will be in the mid 90s today).

I love all the different versions you’ve come up with for this dish!

Yum! I’d have to make a small batch of this since I’m the only one that likes anything with jalapenos but it’d be worth it. Thank you for sharing this at Tea Party Tuesdays linky party.

Just wondering what temp you cook it in oven and approximately the time you cook it for? Thanks!

I just throw it in a 350 degree oven probably for 30 minutes, you are really just waiting for it to warm through since all the ingredients are cooked. :)
